{One-Pan Pasta}

I posted this on my Instagram page last night, and I thought I'd share it here as well.  Martha Stewart's One-Pan Pasta has very quickly made it's way into our dinner rotation, and I love how easy it is to prep.  It's ready in less than 10 minutes, it's full of flavor, and I can throw it together with a baby on my hip! :)  I also love that I can adapt the recipe in so many ways.

When I found out my husband had to work late last night, I knew I wanted something quick and easy that Kate and I could enjoy.  I omitted the basil and red pepper flakes, and I added steamed broccoli so my girl and I could get our veggies in.  It was so yummy!!  I've also added in meats {sausage, ground turkey, chicken}, a little milk, and various other veggies to change it up a little bit.  I hope you enjoy it as much as we do!!

INGREDIENTS:

12 ounces linguine
12 ounces cherry or grape tomatoes, halved or quartered if large
1 onion, thinly sliced (about 2 cups)
4 cloves garlic, thinly sliced
1/2 teaspoon red-pepper flakes
2 sprigs basil, plus torn leaves for garnish
2 tablespoons extra-virgin olive oil, plus more for serving
Coarse salt and freshly ground pepper
4 1/2 cups water
Freshly grated Parmesan cheese, for serving

DIRECTIONS:

Combine pasta, tomatoes, onion, garlic, red-pepper flakes, basil, oil, 2 teaspoons salt, 1/4 teaspoon pepper, and water in a large straight-sided skillet. Bring to a boil over high heat. Boil mixture, stirring and turning pasta frequently with tongs, until pasta is al dente and water has nearly evaporated, about 9 minutes.

Season to taste with salt and pepper, divide among 4 bowls, and garnish with basil. Serve with oil and Parmesan.
