{Couscous Greek Salad}

I made this for the second time last night, and it's just so good I had to share it with you. I recently found this recipe over on designer bags and dirty diapers, and it's one of those great little dishes that you can prep and throw together at the last minute, and there is so much room for substitutions.  I have really fallen in love with Natalie's recipes and Instagram feed, and you'll have to check her out!

I'm Greek, so as you can imagine, I love ALL things Greek...Especially the food!! My parents make the most amazing Greek food, and I'm always trying to learn from them. I have yet to master my mom's amazingly delicious Greek salad, but this is a pretty close second.
I added some diced rotisserie chicken to ours last night to make it more of a meal, and it was so yummy and filling.  Wanna know the best part? I have a big bowl of leftovers in the fridge that I'm about to serve up for lunch. This salad is a gift that keeps on giving!! :) Enjoy!!

I just eyeball my ingredients as I toss them into the bowl, so here's a rough list of what you need.

Ingredients:

Cherry Tomatoes
Red Onion
Whole Wheat Couscous 
English Cucumbers
Kalamata Olives
Red Bell Pepper
Thinly Sliced Spinach
Crumbled Feta

Dressing:

1/2 cup Olive Oil
3 Tablespoons Red Wine Vinegar
Juice of 1/2 a Lemon
1 Minced Garlic Clove
Salt and Pepper

Directions:

Dice up your veggies and toss them into a large bowl.  Cook couscous according to directions, and add cooled couscous to veggies. Mix in spinach, and drizzle with dressing. Top with crumbled feta and serve.
