The last time I was at her house, she served the most delicious meal, and I just recently tried to recreate it. Thank you, Maggie, for the yummy food inspiration and for being the best friend a girl could ask for!
Here's my Crockpot Greek Chicken concoction that I have quickly fallen in love with. It is so good, I swear I feel like I make it once a week. As a matter of fact, I may toss it in my crockpot today to serve tonight over some brown rice with a side of greens. This picture doesn't do it justice, but I promise you it is yummy!! Enjoy!!
Ingredients:
1 lb boneless, skinless chicken breasts (I use 4 large frozen breasts)
3 cloves garlic, minced
1/4 cup fresh lemon juice
1 onion, diced
1/4 cup water
1 tablespon olive oil
2 Tablespoons red wine vinegar
1 teaspoon oregano
1 teaspoon lemon pepper
And I put a little dash of garlic powder in mine too.
Cook on high for 4 hrs or on low for 7-8 hrs.
